Plant Based Protein Cupcakes

INGREDIENTS
- 3 scoops Ultimate Plant Protein by b Raw (Vanilla)
- 1.5 cups Plain Flour
- 1.25 teaspoons Baking Powder
- 1 cup dairy-free Yogurt
- 1/2 cup Almond Milk (Unsweetened)
- 2 Chia Eggs
- 1/4 cup Coconut Oil (Melted)
- 1 tablespoon Edible Sprinkles
- 1 teaspoon Vanilla extract
- 1 scoop Ultimate Plant Protein by b Raw (Vanilla)
FROSTING
- 1/4 cup dairy-free Yogurt
- 1/4 cup dairy-free Cream Cheese
- 3 drops food colour of choice
- 1-2 teaspoons Edible Sprinkles
METHOD
1. Preheat your oven to 165 degrees Celsius
2. Line a muffin tin with baking cups
3. In a large bowl, mix together the dry ingredients
4. Add in the wet ingredients, mixing well until completely smooth
5. Add your sprinkles into the batter
6. Place the batter into your baking cups as evenly as possible - each one should be approximately three quarters full
7. Bake for around 20 minutes, checking around this point. If you pierce the cupcakes with a toothpick, it should come out clean
8. Remove the cupcakes, letting them cool for at least ten minutes
9. In a medium bowl, mix the ingredients for the frosting
10. Place the frosting into a resealable bag that has a corner cut off. That way, you can frost each cupcake with more precision. Alternatively, use a piping tool
