Amazing Sweet Potato Protein Brownies

These decadent sweet potato protein brownies feel like a 'naughty' treat, but are actually 'nice'! Using nourishing, antioxidant-packed ingredients, this recipe is a vegan-friendly take on the traditional treat, that also packs a protein punch. Using the Chocolate Ultimate Plant Protein by b Raw, you'll have a healthy way to bump up your protein, while satisfying your sweet tooth.

INGREDIENTS

  • 1 scoop of Chocolate Ultimate Plant Protein by b Raw

  • 1 medium sweet potato
  • ½ cup of applesauce
  • ½ cup of extra virgin olive oil
  • 1/3 cup of maple syrup
  • 1/3 cup of raw cacao powder
  • 2 tablespoons of coconut flour
  • 2 teaspoons of baking powder

    OPTIONAL TOPPINGS

    • Strawberries or raspberries
    • Melted dark chocolate

    METHOD

    1. Preheat your oven to 180C / 355F
    2. Grate the sweet potato
    3. Combine the sweet potato with the eggs in a medium bowl, using a mixer
    4. Add in the rest of the wet ingredients - applesauce, extra virgin olive oil and maple syrup
    5. Add in the dry ingredients - Chocolate Ultimate Plant Protein by b Raw, raw cacao, coconut flour and baking powder
    6. Lightly spray a baking tin with oil or use baking paper to line it
    7. Place the mixture onto the baking tray, spreading evenly
    8. Pop into the oven for approx. 20 minutes, checking regularly
    9. Let cool for at least 10 minutes before you remove it from the baking tin

      Tip: For extra fudgy-ness, keep it in the fridge. It will store well for 4-5 days (if you can manage to not eat it all before then!)
