Amazing Sweet Potato Protein Brownies
These decadent sweet potato protein brownies feel like a 'naughty' treat, but are actually 'nice'! Using nourishing, antioxidant-packed ingredients, this recipe is a vegan-friendly take on the traditional treat, that also packs a protein punch. Using the Chocolate Ultimate Plant Protein by b Raw, you'll have a healthy way to bump up your protein, while satisfying your sweet tooth.
INGREDIENTS

1 scoop of Chocolate Ultimate Plant Protein by b Raw
- 1 medium sweet potato
- ½ cup of applesauce
- ½ cup of extra virgin olive oil
- 1/3 cup of maple syrup
- 1/3 cup of raw cacao powder
- 2 tablespoons of coconut flour
- 2 teaspoons of baking powder
OPTIONAL TOPPINGS
- Strawberries or raspberries
- Melted dark chocolate
METHOD
- Preheat your oven to 180C / 355F
- Grate the sweet potato
- Combine the sweet potato with the eggs in a medium bowl, using a mixer
- Add in the rest of the wet ingredients - applesauce, extra virgin olive oil and maple syrup
- Add in the dry ingredients - Chocolate Ultimate Plant Protein by b Raw, raw cacao, coconut flour and baking powder
- Lightly spray a baking tin with oil or use baking paper to line it
- Place the mixture onto the baking tray, spreading evenly
- Pop into the oven for approx. 20 minutes, checking regularly
- Let cool for at least 10 minutes before you remove it from the baking tin
Tip: For extra fudgy-ness, keep it in the fridge. It will store well for 4-5 days (if you can manage to not eat it all before then!)
